As you know, we love Afternoon Tea at Jesmond Dene House! There's just something so special about the occasion. We think that getting together with close friends and loved ones to enjoy a traditional favourite is essential - as are blueberry tarts!

We asked Head Pastry Chef Cal Byerley to share his Crème Patisserie and Blueberry Tart recipe! Read on for details.

 

Blueberry Tart with Citrus Crème Patisserie

Crème Patisserie
500 ml milk
50g cornflour
5 egg yolks
80g sugar
1 orange zested
1 lemon zested

Method

Whisk together yolks, sugar, zest and flour. In a medium sized pan, bring the milk just to a light simmer and then pour over the egg mix and whisk together. Place everything back in the pan and cook out until thick making sure to whisk continuously. Pass through a sieve into a bowl and cover with cling film to avoid the crème patisserie getting a skin. Place in a piping bag ready to use. Alternatively, you can just spoon the mix into the tart case. Juice the Lemon and Orange and mix with sugar and boil to create a simpler citrus syrup to brush the blueberries with.

 

Sweet pastry

250g plain flour
150g butter-diced
100g icing sugar-sieved
2 eggs

Method

Put the flour and butter in a small mixer with the paddle attachment and mix on lowest setting until the mix begins to resemble breadcrumbs - about 5 minutes. Then sieve the icing sugar, add into the mixer and continue to mix on the lowest setting for a further 2 minutes. Finally crack two eggs into a bowl and tip in one at a time with a short interval between each one. Continue to mix on the lowest setting for a further 2 minutes. The dough should come together in one piece away from the side of the bowl. Cover the dough in a bowl and refrigerate for at least one hour before use.

Once chilled and rested, roll on a floured service until 3mm thick. Cut out with cutter and press between two fluted tart cases and chill in the fridge for 30 minutes. Once chilled, bake at 160°C for 12 - 15 minutes. Once cooked, remove from the oven and place on a cooling rack. Once cool, pipe crème patisserie into the tart cases and place blueberries on top. Brush with the light citrus syrup and decorate with edible flowers if desired.
